The restaurant was opened on May 11, 2004 by owner/head chef Hiroyuki Kanda. Kanda was born the eldest son of a family who owns a Japanese restaurant in Tokushima prefecture. He began his career as a chef in Osaka upon graduation from high school. At 23 years old he went to Paris, France and worked as head chef in a Japanese restaurant for 5 years. After returning to Japan he worked at Restaurant Aoyagi for 13 years before opening his own restaurant, Kanda in 2004. Kanda is based on the concept of conveying our vision, our art, and our passion through cuisine.
