Kashiwaya

Kashiwaya is a Japanese restaurant that specializes in kaiseki cuisine, a traditional Japanese cuisine that incorporates modern interpretations with a rich variety of flavors, aromas, and textures. The restaurant is inspired by the closeness Japanese people have with nature and the beauty of the changing seasons. Owner Hideaki Matsuo, who developed a strong devotion to the tea ceremony during his university days, began his career at Shofukuro kaiseki restaurant before returning to his hometown to become head chef. He is currently the owner and head chef of Kashiwaya. Matsuo has expanded his professional activities to include instructing junior chefs in Japan, advising on culinary technique internationally, and contributing to regional revitalization programs.
