The new space breaks down barriers, dissolving the wall between the kitchen and dining room. Guests are immersed in the culinary process, experiencing the sights, smells, and sounds of each dish being crafted. “In Japanese, they call it kappo,” says Chef Jimmy Ophorst. “The chef is right there with you.” PRU sources rare and exceptional ingredients, from Trang’s fragrant peppercorns to the tart, elusive Ta-Kro fruit, harvested 50 metres above the ground.
