COA, founded in 2017 by Jay Khan, is a cocktail bar dedicated to agave spirits, particularly tequila and mezcal. Inspired by Mexico’s drinking dens, COA offers a cozy, welcoming space where hospitality and quality drinks take center stage. The 41-page agave spirits menu invites guests to explore a wide range of spirits, including tequila, mezcal, and rare varieties like Raicilla and Sotol. The bar’s interior features reclaimed industrial accents, wooden elements, and a striking mural of Mayahuel, the Aztec goddess of agave. COA also introduces a new seasonal cocktail every week, showcasing fresh, handpicked ingredients. COA’s founder, Jay Khan, has over 15 years of experience in the beverage industry and is passionate about promoting agave spirits. Under his leadership, Jay also co-founded Mezcal Mission to support Habitat for Humanity, furthering his commitment to both his craft and community.
