DarkSide is a cocktail parlour that takes pride in offering a distinguished selection of rare aged spirits, vintage cigars, and classic cocktails, all complemented by sultry live jazz. The bar boasts an extensive collection of fine rum, whisky, and calvados, with a dark spirits selection that dates back to the early 19th century. A standout feature is the exclusive blend of cognac, carefully crafted by the award-winning bar team. The cocktail menu at DarkSide pays homage to Kowloon’s “Dark Side” moniker, blending time-honoured traditions with innovative techniques. Inspired by the ancient Chinese philosophy of yin and yang, the cocktail list beautifully interprets these opposing yet interconnected forces. The menu features eight drinks, each representing a yin and yang counterpart, named after opposing forces. Every cocktail is meticulously crafted with ingredients that embody the essence of its namesake, and served in bespoke, hand-crafted glassware — either custom-designed handmade glasses or porcelain vessels. Illustrated with representations of Hong Kong’s own yin and yang counterparts—Kowloon, or ‘The Darkside’, and Hong Kong Island—the menu immerses guests in the harmony of balance. True to Rosewood’s A Sense of Place® philosophy, local artisans contributed their craftsmanship to the experience.
