Margarita Forés, a renowned Filipino chef, has a deep love for good food. Born into a family of illustrious families in the Philippines, her passion for food was sparked during her time working at Valentino in New York. She then immersed herself in the home kitchens and markets of Florence, Milan, and Rome, where she learned the language to express her passion through ingredients, flavor profiles, and techniques. Upon returning to the Philippines, she launched Cibo di M, Signature Caterer, which focuses on using local ingredients and elevating them using methods learned during her time in Italy. The resulting cuisine is worldly and sophisticated, transcending any one culture or sensibility. Cibo di M has become Philippine society's choice caterer, receiving numerous awards, including the Marietta award by Casa Artusi in 2013. International recognition and championing local producers and ingredients led Cibo di M to become one of the foremost caterers to the Office of the President of the Republic of the Philippines, catering to various state events. Forés has prepared feasts for various heads of state in the Philippines and internationally, including the King and Queen of Spain, the Duke of York, Presidents Bush and Obama, and Philippine Embassies across Europe. As a global ambassador for Filipino cuisine, Forés has allowed the public to experience and feel the flavors she creates and the accoutrements she purveys.
