MONO is a 30-seater restaurant in Asia that offers a unique and refined Latin American gastronomic experience. Chef Ricardo Chaneton reinterprets Latin American cuisine, bringing exquisite flavors and inventive dishes while respecting traditions. The restaurant features a singular tasting menu that uses only the finest seasonal ingredients, with a focus on sustainability and responsible sourcing. The seasonally-evolving menu is shaped by Chef Ricardo's passionate and creative approach, which involves taking on challenges and testing boundaries. Guests enter the restaurant through an entrance foyer with dark leather floors and vintage brass brushed satin glass wall sconces. The kitchen, with a large stainless steel chef's counter, features hand-made marble and terrazzo for floors and special claddings made of recycled wool. The kitchen counter area features an oil paint and wood piece by Japanese sculptor Kishio Suga and charred ceremaic plates designed exclusively for MONO by Cara Janelle. MONO is committed to being unique and has partnered with Blossom Minds, a Hong Kong-based florist offering employment opportunities for young adults with special needs. The main dining room can be transformed into two private dining rooms with soundproof walls, accommodating up to 20 guests. The restaurant uses recycled materials whenever possible, using white panels made of recycled linen and all lights used as low-consumption lights. Sustainable seafood is sourced from a trusted supplier, and herbs are delivered in reusable boxes instead of single-use plastic boxes. Nordaq, a tap-filtered still and sparkling water system, reduces bottle consumption and carbon footprint. Biodegradable film paper is used for food wrapping, and receipts are presented in seeds envelopes, encouraging a greener life.
