Chef Royer's approach is rooted in the principles of French cuisine but also incorporates a sense of place from his time in Asia. The restaurant aims to create an honest and welcoming experience for everyone, with every ingredient having its place and purpose. The restaurant serves modern French cuisine, guided by Chef Julien's lifelong respect for seasonality, terroir, and artisanal producers. The restaurant's wine list celebrates the men and women who have devoted their lives to perfecting their signature, each with an almost fanatical approach to terroir, harvest, and grape. The creative direction at Odette is led by Singaporean artist Dawn Ng, who explores the visual beauty of raw ingredients from Chef Julien's kitchen. The restaurant's interior design, designed by Sacha Leong of Universal Design Studio, reflects Chef Julien's approach of keeping the integrity of ingredients with a soft color palette and elegant décor, while respecting the historic and iconic National Gallery location. A key feature is the glass-enclosed kitchen, where diners can witness the chefs at work, reflecting the openness and honesty of Odette.
