Toby invests time and energy in choosing products that showcase their unique origins and develops relationships with specialty coffee farmers who honor their work. The founder, Toby Smith, has been involved in coffee since 15 years, leaving his career as a lawyer to learn about coffee from seed to harvest. After working with plantations in Brazil and Guatemala, Toby returned to Sydney and began roasting beans in his mom's garage. Since opening his first cafe, Toby continues to push boundaries and dedicate his efforts to roasting and serving the best coffee possible. The company's commitment to sustainability and community is evident in their commitment to quality and integrity in their business relations.
